Persimmon Sour (THC, No Alcohol) Ingredients

2 oz / 60 ml Hemp THC spirit (I used Calmezzi Original; 2 oz is about 6.5 mg)

1 oz / 30 ml Fresh lemon juice

1 oz / 30 ml Persimmon syrup (recipe below)

2 to 3 dashes Spiced apple bitters (optional; I used Dashfire)

How to make a Persimmon Sour (THC, No Alcohol)

Persimmon syrup: bring 1 cup of water to a boil, stir in 1 cup of demerara sugar until it dissolves, add 2 ripe persimmons, sliced and lightly muddled, and simmer on low for about 30 minutes. Strain out the solids and store in a jar in the fridge. Fuyu persimmons (the squat ones) are the easy choice; Hachiyas need to be fully soft or they're astringent.

The drink: add the THC spirit, lemon juice, persimmon syrup and bitters to a shaker with ice. Shake hard for 10 seconds and double strain into a chilled coupe or martini glass. Garnish with a thin persimmon slice and a lemon wheel.

Dosing: 2 oz of a 5 mg per 1.5 oz spirit is about 6.5 mg. Pour per glass, not from a pitcher.

A persimmon sour with no alcohol in it: a hemp THC spirit, fresh lemon and a persimmon syrup, shaken and served up. Persimmons are in season from October through December and almost nobody puts them in a drink, which is a shame, because cooked down into a demerara syrup they taste like honey and apricot with a little spice behind it. The suggestion came from my friend Kariann, who's @kari_sits_and_sips on TikTok.

The syrup is the whole recipe. One cup of demerara sugar in one cup of boiling water, two persimmons sliced and muddled into it, simmered for about 30 minutes, strained. It keeps two weeks in the fridge and it's good in an old fashioned too. The sour itself is a standard two-one-one: two ounces of spirit, an ounce of lemon, an ounce of syrup, with a couple dashes of spiced apple bitters for the fall end of it.

Two ounces of Calmezzi Original is about 6.5 mg; pour 1.5 oz for a one-dose drink. It's one of the no-alcohol drinks in our Thanksgiving cocktail recipes, alongside the spiced apple THC mule from the same bottle's spiced sibling.
