Mai Tai Variations: 7 Riffs I Actually Make, From the 1944 Original to a Rye Tai

A Mai Tai is rum, fresh lime, orgeat, and orange curaçao. How many rums is up to you: Vic's original used one, most people split it across two, and Kevin Crossman blends four. Change any one piece and you've got a new drink with the same bones, which is why the tiki world has been riffing on it since the 1950s. Every drink below is one I've actually built, poured, and put on camera. Most have their own recipe page, and the two that don't get their spec here.

If you only know the resort version, start with the original. The classic Mai Tai recipe is 1 oz each of Jamaican and Martinique rum, 0.75 oz lime, 0.5 oz orgeat, and 0.5 oz dry curaçao, shaken and poured over pebble ice with a mint sprig and the spent lime shell. No pineapple juice, no grenadine, nothing pink. Everything else on this page is a departure from it.

Where the Mai Tai came from

Victor Bergeron, Trader Vic, mixed the first one at his Oakland bar in 1944 for friends visiting from Tahiti. One of them tasted it and said "Mai tai roa ae," Tahitian for roughly "the best, out of this world," and the name stuck. He built it on a 17-year J. Wray & Nephew Jamaican rum, and when that rum ran out in the 1950s he rebuilt the drink on two rums, an ounce of Jamaican and an ounce of Martinique. That's why tiki people still blend rums for this drink. Donn Beach of Don the Beachcomber later claimed he got there first with a 1933 drink called the Q.B. Cooler. The two settled out of court in 1970, in Trader Vic's favor.

Vic took the drink to the Royal Hawaiian in Waikiki in 1953, and the Mai Tai he brought had no pineapple in it. Pineapple and orange juice crept into Hawaiian Mai Tais in the 1960s, and that's the one most people have had on vacation. So there are really two Mai Tais: the 1944 original, and the Hawaiian one that grew up next to it. The riffs below all hang off the original. The ones that change the rum

Tia Mia

Ivy Mix's riff from Leyenda in Brooklyn, and the name is "Mai Tai" with the vowels swapped. Half the rum base comes out and mezcal goes in, so it drinks like a Mai Tai with smoke underneath. The lime, orgeat, and dry curaçao stay exactly where Vic left them. Full recipe: the Tia Mia.

  • 1 oz / 30 ml Jamaican rum
  • 0.75 oz / 22 ml fresh lime juice
  • 0.5 oz / 15 ml dry curaçao
  • 0.5 oz / 15 ml orgeat

Rio Mai Tai

The Brazilian rebuild. Cachaça takes over the whole base, and cashew fruit syrup stands in for the orgeat, which makes sense once you know cashews grow on the bottom of a fruit. The garnish is the spent lime shell turned upside down with a few cashews inside. Full recipe: the Rio Mai Tai.

  • 2 oz / 60 ml cachaça
  • 0.75 oz / 22 ml fresh lime juice
  • 0.5 oz / 15 ml cashew fruit syrup
  • 0.5 oz / 15 ml orange liqueur

Shake with pebble ice and dirty pour over more pebble ice.

Bitter Mai Tai

Jeremy Oertel's 2011 riff from Dram in Brooklyn. Campari steps into the lead role usually held by the second rum, and a high-proof Jamaican rum makes sure the rum doesn't get lost under the bitter. I made mine in a Dorothy Zbornak mug from the Golden Girls tiki set, because a drink with this much bite could only belong to Dorothy. Full recipe: the Bitter Mai Tai.

  • 1.5 oz / 45 ml Campari
  • 0.75 oz / 22 ml Jamaican rum
  • 0.5 oz / 15 ml dry curaçao
  • 1 oz / 30 ml fresh lime juice
  • 0.75 oz / 22 ml orgeat

Brief shake with pebble ice, pour into a tiki mug packed with more, mint sprig and a lime wheel.

Pineapple Rye Tai

Tiki purists, look away. This one drops rum altogether for rye whiskey, and Jim Beam Pineapple, a 70-proof liqueur, does the job of the orange liqueur and part of the syrup. Honest verdict from the taste test: it's good, it leans sweet, and next time I'd reach for a spicier rye. Full recipe: the Pineapple Rye Tai.

  • 2 oz / 60 ml rye whiskey
  • 1 oz / 30 ml Jim Beam Pineapple
  • 0.75 oz / 22 ml fresh lime juice
  • 0.5 oz / 15 ml orgeat
  • 2 dashes Elemakule tiki bitters

The ones that change the sweet

Hibiscus Mai Tai

Hibiscus brings its own tartness, so it does real work in the drink instead of just turning it red. The split base stays, with cachaça or rhum agricole in the Martinique slot, and hibiscus syrup takes over part of the sweetening from the orgeat. More lime, half the orgeat, and it drinks sharper and more floral than the original. Full recipe: the Hibiscus Mai Tai.

  • 1 oz / 30 ml dark Jamaican rum
  • 1 oz / 30 ml cachaça or rhum agricole
  • 0.5 oz / 15 ml orange liqueur or Creole orange shrub
  • 0.25 oz / 8 ml orgeat
  • 0.75 oz / 22 ml hibiscus syrup
  • 1 oz / 30 ml fresh lime juice

Shake with ice, open pour over pebble ice, hibiscus flower on top.

Pineapple Mai Tai

If you want pineapple in a Mai Tai, this is how I'd do it. The split rum base, lime, and orgeat stay put, and Chinola's pineapple liqueur goes in where the orange liqueur was. The one with no alcohol

THC Cranberry Mai Tai

I call it the Cranberry Vibe Tai. It's a Mai Tai in structure with no alcohol in it: the rum comes out, a THC-infused cranberry spirit goes in, blood orange cordial stands in for the orange liqueur, and the orgeat stays exactly where it is, because almond is what keeps it tasting like a Mai Tai.   • 2 oz / 60 ml THC-infused cranberry spirit
  • 0.5 oz / 15 ml orgeat
  • 0.5 oz / 15 ml blood orange cordial
  • 1 oz / 30 ml fresh lime juice
  • 3 to 4 dashes Elemakule tiki bitters

The one from a can

Cutwater Tiki Rum Mai Tai can next to a homemade 1944 Mai Tai

Cutwater's Tiki Rum Mai Tai is the Hawaiian one, not Vic's. The can says pineapple and coconut, the label lists white rum, barrel-aged rum, and natural flavors, and there's no orgeat or almond anywhere on it. It's 12.5% alcohol in a 12 oz can, which works out to about two and a half standard drinks. I made the 1944 original next to it and put both on camera. I said on camera that it tastes like shit, and I stand by it. If you want a Mai Tai from a can, Crafthouse makes the one I'd buy, from Charles Joly, and Post Meridiem's 1944 Mai Tai is a close second and prints the full spec right on the label. Both are good. Cutwater isn't. If you want a real one at home, it's four or five ingredients and a shaker, and the orgeat keeps for months.

What's the difference between a Hawaiian Mai Tai and the original?

Pineapple and orange juice. The 1944 original has neither, just rum, lime, orgeat, and curaçao. The Hawaiian version that took over resort bars in the 1960s adds both juices and often floats a dark rum on top, so it's sweeter, longer, and usually orange instead of amber. Neither is wrong, but they're different drinks, and if you order a Mai Tai in a tiki bar you'll get the first one.

What's the best rum for a Mai Tai?

There's no single answer, and how many bottles you use is part of the argument. Vic started with one, a 17-year Wray & Nephew nobody can buy anymore. Most people split the base across two: Jamaican rum brings the funk and Martinique rhum agricole brings the grass, and together they land close to what Vic poured. Appleton 12 and Clément is my pairing. Kevin Crossman's Ultimate Mai Tai blends four. If you'd rather buy one bottle, Denizen Merchant's Reserve is a Jamaican and Martinique blend made specifically for this drink, and it's what I poured in the Cutwater video.

What does Mai Tai mean?

It's from the Tahitian "maita'i," which means good, and the story goes that the first taster said "Mai tai roa ae," roughly "the best, out of this world." It's pronounced "my tie."
