1.75 oz / 52 ml Amburana-aged cachaça (or an aged rhum agricole, which is what St. George uses)

.5 oz / 15 ml Simple syrup

Pebble or crushed ice

Pear slice or grated nutmeg for garnish

How to make a Ponga Punch with St. George Spiced Pear Liqueur

Add the cachaça, spiced pear liqueur, lime juice and simple syrup to a shaker with ice. Shake hard for 10 seconds.

Strain over pebble or crushed ice in a rocks glass or a small tiki mug. Garnish with a thin pear slice, or grate nutmeg over the top.

Cachaça: Avuá Amburana and Novo Fogo Tanager are the two amburana-aged bottles that are easy to find. No amburana? An aged cachaça or an aged rhum agricole works, and you lose a little of the cinnamon, which the liqueur mostly covers.

Pebble ice: a nugget ice maker is the easy way. A Lewis bag and a mallet is the cheap way.

Batching: multiply everything, stir it together without ice, keep it cold, and pour over fresh pebble ice per drink. No shaking needed if the pitcher is cold and you stir each glass.

Ponga Punch with St. George Spiced Pear Liqueur

Ponga Punch is a St. George Spirits recipe, a single-serving punch built on their Spiced Pear Liqueur: pear brandy and pear juice steeped with cinnamon and clove, sweet enough to sip on its own. St. George makes it with an aged rhum agricole. I made it with an amburana-aged cachaça, and that's the version to chase. Amburana is a Brazilian wood that gives cachaça a cinnamon-and-vanilla finish, so the barrel and the liqueur are speaking the same language.

It's a daiquiri shape underneath, spirit, lime and sugar, with the liqueur doing half the sweetening. Served over pebble ice it drinks like a tropical punch that wandered into a Thanksgiving kitchen: cane funk from the cachaça, then baking spice from both the wood and the pear.

It's the pear drink in our Thanksgiving cocktail recipes. If you'd rather the spice came from the whiskey, the Lion's Tail is the bourbon sour with allspice dram.
